The U.S. Embassy in Suva is hosting a culinary program featuring Chef Henry Obispo, a prominent advocate for healthy eating and environmental responsibility. The event will run from January 21 to January 28, 2025, with Obispo leading various activities aimed at promoting the use of local produce in innovative dishes.

Chef Henry Obispo, who hails from New York and is known for his urban farming initiatives, will collaborate with health professionals, the food service industry, and youth in Fiji. His focus will be on transforming local ingredients into creative meals while emphasizing community-based healthy eating solutions.

One of the key events during this week-long program is a public cooking demonstration at the Health Fair in Albert Park on Sunday, January 26. These sessions will feature plant-based recipes that utilize sustainable and locally sourced ingredients. Participants will gain insights into the cultural and health advantages of responsible food preparation and receive practical advice on incorporating healthy and eco-friendly choices into their daily cooking routines.

U.S. Ambassador Marie Damour expressed enthusiasm for the initiative, stating: “This program highlights our shared values of community and sustainability.” She added that "Chef Obispo’s work demonstrates the power of food in creating connections and bringing communities closer through food."

The U.S. Embassy has acknowledged its local partners—Healthy Eating Fiji, University of the South Pacific, and The Pacific Island Food Revolution—for their support in making this program a success.
